Vegetables, especially tomatoes, are a significant source of lycopene.<\/p>\n<p>The analysis was published in the journal <a href=\"http:\/\/www.neurology.org\/content\/79\/15\/1540.abstract?sid=fc7e7180-e53d-4380-953f-5ff96bde271c\">Neurology<\/a>, prospectively followed 1,031 men ages 46 to 55, measuring their blood levels of five antioxidants and recording incidents of stroke.<\/p>\n<p>According to the journal, serum concentrations of carotenoids retinol and \u03b1-tocopherol were measured by high-performance liquid chromatography.
